Ingredients

  • 2 cloves garlic
  • 2 Tbsp. olive oil
  • 1 (8 oz.) can tomato sauce
  • 1 c. water
  • 1 (16 oz.) can cannellini beans
  • 1/2 lb. ditalini or elbow macaroni
  • fresh parsley
  • grated cheese

Instructions

  1. In a saucepan, fry minced garlic gently in olive oil until golden brown.
  2. Add tomato sauce and water; cook for 10 minutes.
  3. Add beans and stir gently.
  4. Continue to cook on simmer.
  5. Cook pasta al dente, then drain and add to the bean mixture.
  6. Stir gently to combine.
  7. If the mixture gets too thick, add a little more water.
  8. Add chopped parsley.
  9. Serve immediately to prevent pasta from absorbing all the liquid.
  10. Sprinkle grated cheese over the dish before serving.
