Ingredients

  • 1/2 cup egg whites
  • 1 1/2 cups sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon vanilla
  • 2 1/2 cups shredded coconut

Instructions

  1. Beat egg whites until frothy.
  2. Gradually add sugar and continue beating until stiff and glossy.
  3. Stir in salt, vanilla, and shredded coconut.
  4. Drop spoonfuls onto ungreased brown paper, 2 inches apart.
  5. Bake at 325°F (163°C) for about 20 minutes or until golden brown.
  6. Remove from oven and place paper on damp towel.
  7. Steam will loosen cookies; let cool before handling.
