- Wash apples, cut in half, remove stems and cores, leaving skins intact.
- Place apples in a large pot.
- Add cinnamon, vanilla bean, lemon zest, lemon juice, sugar, white wine, and water to the pot.
- Bring to a boil over medium-high heat.
- Reduce heat to low and simmer, covered, until apples are soft, about 30 minutes.
- Remove from heat and let cool slightly.
- Remove and discard the cinnamon stick and vanilla bean.
- Puree the apples and pan juices in a blender for a smoother sauce or process for a chunkier texture.
