Ingredients

  • 1 envelope gelatin
  • 1/4 cup cold water
  • 1/2 cup boiling water
  • 1 tablespoon lemon juice
  • 1 1/2 cups mashed ripe avocado
  • 1/3 cup mayonnaise
  • 3/4 teaspoon salt
  • 2 tablespoons finely minced onion
  • 1 small ripe tomato, seeded and diced

Instructions

  1. Sprinkle gelatin over cold water and let stand for 5 minutes.
  2. Add boiling water and stir until the gelatin is dissolved.
  3. Whisk in lemon juice, mashed avocado, mayonnaise, and salt.
  4. Stir in minced onion and diced tomato.
  5. Pour into a 3-cup mold or bowl and refrigerate until set. Make in the morning and serve in the evening; it will not darken.
