Malacca Chicken

Ingredients

  • 4 lb. chicken
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. black pepper
  • 1/4 tsp. ground cloves
  • 1 tsp. salt
  • 1 chicken bouillon cube
  • 1/4 tsp. ground ginger
  • 1 c. boiling water
  • 1/4 c. soy sauce
  • 1 clove garlic, mashed

Instructions

  1. Clean and truss the chicken.
  2. Rub it all over with a mixture of the combined spices and salt.
  3. Brown the chicken in oil in a large pot.
  4. To the pot, add chicken cube, boiling water, soy sauce and garlic.
  5. Cover and simmer for 1 hour, basting occasionally. Add the potatoes to the pot.
  6. Simmer and baste until the potatoes are done.
