Ingredients

  • 4 medium size zucchini, sliced thin
  • 1 onion, chopped
  • 2 to 3 cloves garlic, chopped
  • 1 lb. lean ground turkey
  • thyme
  • basil
  • 10 oz. macaroni
  • 28 oz. canned crushed tomatoes
  • 15 oz. tomato sauce

Instructions

  1. Saute meat.
  2. Saute onion, garlic and herbs.
  3. Combine meat, onion mixture, zucchini and crushed tomatoes in a large saucepan. Simmer 2 to 4 hours.
  4. This freezes well.
  5. To serve, add tomato sauce and simmer while cooking macaroni.
  6. Toss pasta with sauce and serve.
