  7. Flatten each ball in the palms, fill with about 1 tablespoon of filling.
  8. Pull the dough over the filling, pinch and twist edges to seal.
  9. Place the filled buns on 3x3 inch pieces of wax paper, pinched side down.
  10. Grease the rack of a steamer and place the buns inside.
  11. Pull a small cloth over the top cover of the steamer to collect water.
  12. Steam the buns for 40 minutes or longer until cooked through.
