Ingredients

  • 1 lb Eckrich smoked sausage, sliced (or your favorite brand)
  • 1 bell pepper, chopped
  • 1 purple onion, chopped
  • 1 (16 ounce) can pineapple chunks, drained
  • 1 (8 ounce) jar sweet and sour sauce
  • 1 tablespoon Tabasco sauce (may add more, to taste)
  • fresh jalapeno

Instructions

  1. Place smoked sausage, bell pepper, purple onion, pineapple chunks, sweet and sour sauce, Tabasco sauce, and jalapeno in the slow cooker.
  2. Cook on HIGH for 1-1 1/2 hours or on LOW for 3 to 4 hours, or until bell pepper and onion are tender.
  3. Serve on top of a bed of rice, or by itself with a salad.
