Marmalade - With Pectin

A tangy and sweet homemade marmalade with citrus flavors, perfect for spreading on toast or gifting, crafted from mandarins, lemons, sugar, and pectin for a delightful preserve.

Ingredients

  • 6 mandarins
  • 1 1/2 cups water
  • 1/2 bottle liquid pectin
  • 2 lemons
  • 5 cups sugar

Instructions

  1. Remove mandarin and lemon peels, lay peel flat, and cut off as much of the white part of the peel as possible, then discard the white.
  2. Slice the peel into very thin slices.
  3. Cover the peel with 1 1/2 cups water, bring to a boil, and simmer for 20 minutes.
  4. Chop the fruit pulp and discard any seeds and membrane.
  5. Add pulp to the undrained peel and simmer for 10 minutes.
  6. Measure 3 cups of the fruit mixture into a kettle and add sugar.
  7. Follow the procedure on the pectin container for the rest of the processing.
  8. Skim foam off the top and ladle into hot, sterilized glasses, then seal.
