Marmalade - With Pectin
A tangy and sweet homemade marmalade with citrus flavors, perfect for spreading on toast or gifting, crafted from mandarins, lemons, sugar, and pectin for a delightful preserve.

- Remove mandarin and lemon peels, lay peel flat, and cut off as much of the white part of the peel as possible, then discard the white.
- Slice the peel into very thin slices.
- Cover the peel with 1 1/2 cups water, bring to a boil, and simmer for 20 minutes.
- Chop the fruit pulp and discard any seeds and membrane.
- Add pulp to the undrained peel and simmer for 10 minutes.
- Measure 3 cups of the fruit mixture into a kettle and add sugar.
- Follow the procedure on the pectin container for the rest of the processing.
- Skim foam off the top and ladle into hot, sterilized glasses, then seal.
