Ingredients

  • 12 carrots
  • 4 to 5 Tbsp margarine
  • 1 tsp salt
  • 1 tsp pepper
  • 1 Tbsp cognac

Instructions

  1. Boil the carrots until they are soft.
  2. Puree the cooked carrots along with margarine, salt, pepper, and cognac in a food processor or Cuisinart.
  3. Place the pureed mixture in a casserole dish and cool for 40 to 45 minutes at 350°F.
