Ingredients

  • 2 c. sugar
  • 3/4 c. water
  • 1 tsp. vinegar
  • 1/4 tsp. salt
  • 1 envelope Knox gelatine
  • 1/2 c. cold water
  • 2 well beaten egg whites

Instructions

  1. Cook sugar, water, vinegar, and salt to a medium hard ball stage (231°F).
  2. Put gelatin in a mixing bowl in cold water to soften.
  3. Pour hot sugar mixture over gelatin and beat about 10 minutes or until it begins to work up on beaters.
  4. Add well-beaten egg whites and continue beating until the mixture thickens again, about 5 minutes or more.
  5. Add coloring and flavoring, if desired (such as vanilla, raspberry, or almond).
  6. Pour the mixture into a buttered 9x9-inch square pan and let stand in the fridge for at least 2 hours.
  7. Remove from fridge, place on a cold damp tea towel, and cut into desired pieces.
  8. Roll in coconut, chopped nuts, or cracker crumbs, if desired.
