- Grind almonds very fine and combine with powdered sugar until well blended.
- Make a well in center of mixture and add unbeaten egg whites.
- Knead to a smooth consistency that does not stick when working with a spatula, then by hand.
- If it is too dry, add more egg whites.
- Paste should be moist enough to be formed into any desired shape.
- Keep paste covered while shaping, as it dries out easily.
