Ingredients

  • 2 lb. unpeeled red skinned potatoes
  • 1/4 c. low-fat milk
  • 1/2 tsp. fresh ground pepper
  • 3 Tbsp. finely chopped Italian parsley
  • 1 Tbsp. unsalted butter or olive oil

Instructions

  1. Place potatoes in a medium saucepan with water to cover. Bring to boil over high heat.
  2. Lower heat to a simmer and cook until potatoes are cooked through, about 10 minutes.
  3. Drain, reserving 1/4 cup of the cooking water.
  4. Place the pot over low heat.
  5. Using a potato masher, roughly mash, adding the reserved water, milk, pepper, parsley, and butter or oil.
