Massaged Kale Salad

- In a bowl whisk the juice of 1 lemon and EVOO and 2 pinches of salt. Use this to massage all the kale leaves and set them aside.
- Make dressing: Juice of 2d lemon; lots of honey (maybe 2 tablespoons); lots and lots of black pepper and a bit moore EVOO. Whisk.
- Just before serving dress salad. Then sprinkle grated Parmesan right on salad. Then pour the mangos and pepitas on top.
