Mediterranean Mozza-Chicken

Ingredients

  • 4 small chicken breasts, boneless, skinless
  • 1 red onion, halved, sliced
  • 1 zucchini, chopped
  • 14 cup Kraft salad dressing (Extra Virgin Olive OIl Sun Dried Tomato)
  • 12 cup grape tomatoes or 12 cup cherry tomatoes, halved
  • 12 cup pitted black olives
  • 100 g kraft mozzarella cheese, cubed

Instructions

  1. Heat large nonstick skillet sprayed with cooking spray on medium-high heat.
  2. Add chicken; cover skillet with lid.
  3. Cook 5 -7 minutes on each side or until chicken is cooked through (170F) , adding onion and zucchini after 5 minutes.
  4. Add dressing, tomatoes, and olives; cover.
  5. Cook on medium-low heat 2 minutes or until heated through.
  6. Stir mixture.
  7. Top with cheese; cover.
  8. Cook 2 minutes or until cheese is melted.
  9. Serve with hot cooked rice and/or cut up pita bread to absorb some of the sauce.
