Melon Chicken Salad
A refreshing melon and chicken salad featuring sweet cantaloupe, crisp celery, and flavorful blue cheese dressing, perfect for light summer meals or entertaining guests.

- Pare the cantaloupe and cut into four crosswise slices.
- Remove seeds and cut out the inside of the cantaloupe rings to leave a one-half inch ring.
- Reserve the cut-out melon pieces.
- In a large bowl, combine the reserved melon pieces and cut the rest of the melon into cubes.
- Cut the cooked chicken, celery, and radishes into cubes.
- Mix the cubed chicken, celery, radishes, and melon with blue cheese dressing.
- Cover and chill the salad for several hours.
- To serve, place the melon slices on salad plates and spoon the chicken salad into the middle of each ring.
- Garnish with celery leaves.
