  • 2 cups cooked chicken, cut-up

  2. Remove seeds and cut out the inside of the cantaloupe rings to leave a one-half inch ring.
  3. Reserve the cut-out melon pieces.
  4. In a large bowl, combine the reserved melon pieces and cut the rest of the melon into cubes.
  5. Cut the cooked chicken, celery, and radishes into cubes.
  6. Mix the cubed chicken, celery, radishes, and melon with blue cheese dressing.
  7. Cover and chill the salad for several hours.
  8. To serve, place the melon slices on salad plates and spoon the chicken salad into the middle of each ring.
  9. Garnish with celery leaves.
