Ingredients

  • 1 1/2 cups sugar
  • 4 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1 teaspoon grated lemon peel
  • 1 1/2 cups hot water
  • 3 egg yolks
  • 1/2 cup fresh lemon juice

Instructions

  1. Mix sugar, cornstarch, and salt in a pan.
  2. Add hot water and cook over direct heat, stirring, for 6 to 8 minutes.
  3. Remove from heat and stir 1/4 cup of hot mixture into beaten egg yolks.
  4. Return egg yolk mixture to the hot mixture and cook for 6 minutes over low heat.
  5. Remove from heat, then add lemon juice, lemon peel, and butter.
  6. Cool slightly and pour into a pie shell.
