- Mix sugar, cornstarch, and salt in a pan.
- Add hot water and cook over direct heat, stirring, for 6 to 8 minutes.
- Remove from heat and stir 1/4 cup of hot mixture into beaten egg yolks.
- Return egg yolk mixture to the hot mixture and cook for 6 minutes over low heat.
- Remove from heat, then add lemon juice, lemon peel, and butter.
- Cool slightly and pour into a pie shell.
