Ingredients

  • 1 Tbsp. cornstarch
  • 6 Tbsp. sugar
  • 1/2 cup water
  • pinch of salt
  • 3 egg whites

Instructions

  1. Mix cornstarch and 2 tablespoons of sugar with water; cook until clear.
  2. Remove from heat and set aside.
  3. Add salt to the egg whites; whip until foamy or stands in peaks.
  4. Gradually add the cornstarch mixture to the egg whites; continue beating until creamy.
  5. Add the remaining sugar gradually, beating constantly.
  6. Pile the meringue on top of the pie filling, spreading all the way to the edges.
  7. Bake at 325°F (160°C) for 30 minutes, or until golden brown.
