Meringue Tortes

Light and airy meringue tortes with a crisp exterior and soft interior, perfect for a delicate dessert served with ice cream and fresh berries. Suitable for special occasions.

Ingredients

  • 6 egg whites
  • 1/2 tsp. cream of tartar
  • 2 c. sugar

Instructions

  1. Beat together the egg whites and cream of tartar until frothy.
  2. Gradually beat in sugar, a little at a time, until very stiff and glossy.
  3. Drop the meringue mixture by small spoonfuls in a circle on brown paper on a baking sheet.
  4. Bake at 275°F (135°C) for 1 hour.
  5. Turn off the oven and leave the meringues inside until the oven has cooled.
  6. Serve the meringue tortes filled with ice cream and topped with fresh berries.
