Mexican Beef Tostadas

Ingredients

  • 8 corn tortillas (6 inch)
  • 17 ounces packaged beef roast
  • 1 (14 ounce) can diced tomatoes with green chilies
  • 1 medium green bell pepper, cut in strips
  • 12 cup sour cream
  • 1 medium lime, cut in wedges

Instructions

  1. Wrap tortillas in paper towels.
  2. Microwave on high for 45-60 seconds or until warm.
  3. Cover and set aside.
  4. Microwave beef according to package directions.
  5. Meanwhile, in a small saucepan, heat tomatoes with juice for 4 minutes.
  6. Cut meat into slices and serve on warmed tortillas with tomatoes and green bell peppers.
  7. Top each with 1 tablespoon of sour cream and serve with lime wedges.
