Ingredients

  • 1 lb. ground beef
  • 1 pkg. taco seasoning mix
  • 1/2 c. water
  • 1/2 c. Velveeta cheese
  • 1 can Ro-Tel tomatoes
  • 1 medium pkg. tortilla chips

Instructions

  1. Brown the ground beef over medium heat in a skillet. Drain excess fat.
  2. Add taco seasoning mix and 1/2 cup water to the beef. Simmer until most of the water is absorbed.
  3. In a small saucepan, melt Velveeta cheese over medium heat with the Ro-Tel tomatoes until smooth.
  4. In a baking dish, layer broken tortilla chips, the cooked meat mixture, and the melted cheese with Ro-Tel.
  5. Bake in a preheated oven at 350°F (175°C) for 10 minutes until heated through and bubbly.

Tips & Substitutions

For a spicier kick, consider adding diced jalapeños or using a spicy taco seasoning mix. If you're short on time, pre-cooked shredded chicken can be a great substitute for ground beef. To make it vegetarian, replace the meat with black beans or lentils. This casserole is versatile, and you can even layer in some veggies like bell peppers or corn for added nutrition.

Serving Suggestions

This Mexican Casserole is perfect for a casual family dinner or a game day gathering. Serve it with a side of Mexican rice or a fresh salad, such as Taco Salad - California Style, for a complete meal. Top each serving with fresh cilantro, avocado, or sour cream for extra flavor.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. When reheating, use the oven to maintain the crispiness of the tortilla chips, heating at 350°F (175°C) for about 15 minutes. You can also microwave it, but be aware that the chips may become soggy.
