Super Mexican Dip is a flavorful layered appetizer featuring seasoned beef, refried beans, cheese, and fresh toppings, perfect for parties and sharing with friends.

Ingredients

  • 1 Tbsp vegetable oil
  • 1 1/2 lb ground beef
  • 1 1/2 large onions, chopped
  • salt
  • pepper
  • 1 (16 oz) can refried beans
  • 1 (7 oz) can diced green chiles, drained
  • 1 (7 oz) can fresh salsa, drained
  • 2 cups shredded Cheddar cheese
  • sour cream
  • chopped black olives

Instructions

  1. Heat oil in a heavy skillet over medium heat.
  2. Add ground beef and chopped onions.
  3. Cook until beef is browned, breaking it up with a fork, about 5 minutes.
  4. Drain excess fat from the skillet.
  5. Season with salt and pepper.
  6. Spoon half of the refried beans into a 9 x 13-inch glass baking dish.
  7. Top with half of the beef mixture, drained green chiles, drained salsa, and 1/2 cup of shredded Cheddar cheese.
  8. Repeat with the remaining ingredients: beans, beef mixture, chiles, salsa, and cheese.
  9. Can be prepared 1 day ahead, covered and chilled.
  10. Bake at 350°F until heated through and cheese melts, about 30 minutes.
  11. Top with sour cream, chopped green onions, and sliced black olives before serving.
  12. Serve with chips.
