Crispy Mexican Tequitos filled with tender baked potatoes wrapped in fajitas, perfect for a quick snack or appetizer with savory flavors and satisfying crunch.

Ingredients

  • 2 to 3 large potatoes
  • 1 package fajitas (medium size)
  • 1 1/2 cups oil
  • salt to taste

Instructions

  1. Bake the potatoes until tender.
  2. Scrape the meat from the potatoes.
  3. Spoon the potato meat into a fajita.
  4. Roll up the fajita with the filling inside, with the edge down.
  5. Heat oil over medium heat and cook the rolled fajitas until crisp.
  6. Drain on paper towels and serve.
