Ingredients

  • 2 cups cooked pinto beans, rinsed and drained
  • 2 tablespoons lime juice
  • 1 medium tomato, peeled
  • 3 cloves garlic, minced
  • a handful of fresh parsley
  • a handful of fresh cilantro
  • 3/4 teaspoon cumin
  • 1 scallion, minced
  • 1/4 teaspoon salt

Instructions

  1. Whip all ingredients in a food processor until smooth.
  2. Serve with tortilla chips, pita crisps, or vegetable dippers such as pepper strips and celery sticks.
