  2. Combine 2/3 of the almond bark with the semi-sweet morsels and place in a 4-cup glass measure.

  4. Spread half of this mixture on the bottom of the prepared pan. Refrigerate just until set, then remove from refrigerator.
  5. Place the remaining almond bark in a 2-cup glass measure.
  6. Microwave on High about 1 1/2 minutes, then stir until smooth.
  7. Add a drop or two of green food coloring and peppermint extract to the remaining chocolate mixture.
  8. Add a little milk only if the green mixture gets stiff.
  9. Spread this over the chocolate layer in the pan.
  10. Refrigerate and remove as before, until set.
  11. Microwave the remaining chocolate about 30 seconds until melted.
  12. Spread over the mint layer.
  13. Allow to set at room temperature, then cut into small pieces.

Tips & Substitutions

To enhance the choco-mint flavor, consider using dark chocolate chips instead of semi-sweet morsels. If you prefer a stronger mint taste, increase the peppermint extract slightly. Additionally, ensure you stir the chocolate mixture well after microwaving to prevent any lumps. If you find the green mixture too stiff, add a splash of milk to achieve the desired consistency for spreading.

Serving Suggestions

These delightful treats make a perfect dessert for holiday gatherings or as a sweet snack during movie nights. Pair them with a cup of hot cocoa or coffee for a cozy experience. They also work wonderfully as a topping for ice cream or as part of a dessert platter alongside Basic Vanilla Pudding for added variety.

Storage & Reheating

Store the Creamy Choco-Mint Melts in an airtight container at room temperature for up to a week. If you need to keep them longer, refrigerate them, but allow them to come to room temperature before serving for the best texture. Reheat individual pieces in the microwave for about 10 seconds if you prefer a softer bite.

Frequently Asked Questions

Can I use white chocolate instead of almond bark?

Yes, you can substitute white chocolate for almond bark in this recipe. However, keep in mind that white chocolate has a different flavor profile and may require you to adjust the amount of peppermint extract to balance the sweetness.

What can I use instead of peppermint extract?

If you don't have peppermint extract, you can use peppermint oil, but use it sparingly as it is much more concentrated. Alternatively, you could use vanilla extract for a different flavor, though it won't give you that classic minty taste.

How do I prevent the chocolate from seizing?

To prevent the chocolate from seizing, make sure all your utensils and the glass measuring cups are completely dry. Avoid adding water or moisture to the chocolate mixture, and only microwave in short intervals, stirring frequently to maintain a smooth texture.
