Ingredients

  • 1 package corn flour enchiladas
  • sliced roast beef or turkey
  • lettuce
  • mayonnaise
  • Pace picante sauce

Instructions

  1. Spread a layer of mayonnaise on an enchilada and place a few slices of roast beef or turkey on top.
  2. Add a small amount of lettuce and roll up the enchilada.
  3. Microwave the rolled enchilada for about 1 minute.
  4. Remove from microwave and spoon 1 tablespoon of picante sauce over the top.
  5. Optional: add tomato slices if desired.
