Ingredients

  • 2 lb ground beef
  • 1 cup cornmeal
  • 1 cup cold water
  • 1 tablespoon margarine
  • 1 teaspoon salt
  • 2 cups boiling water
  • 1 package taco mix
  • 1 package onion soup mix
  • 2 cups shredded cheese
  • 1 head shredded lettuce
  • 1/2 cup taco sauce
  • 1/2 cup sour cream
  • olives

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix cornmeal, cold water, margarine, and salt until well combined.
  3. Add boiling water to the mixture and cook until it thickens, then cover and simmer for 5 minutes.
  4. Spread the cornmeal mixture in a 13 x 9 x 2-inch baking dish and bake for 15 minutes.
  5. While baking, brown the ground beef with taco mix and onion soup mix. Drain off excess fat.
  6. Press half of the cooked ground beef mixture over the baked cornmeal crust and sprinkle with 1 cup of shredded cheese.
  7. Bake uncovered for an additional 20 minutes.
  8. Mix the remaining ground beef mixture with shredded lettuce and spread over the baked crust.
  9. Garnish with sour cream, taco sauce, olives, and sprinkle with remaining cheese before serving.
