- Roast the pecans, almonds, and walnuts by placing them in a single layer on a baking sheet and baking at 350°F for 8 to 10 minutes until just beginning to brown.
- Mix together the sugar, cinnamon, salt, and half and half in a microwave-safe bowl.
- Microwave on High for 2 minutes, then stir.
- Microwave again for 1 minute or until the mixture thickens.
- Stir in vanilla extract and the roasted nuts, coating them well.
- Spoon the nut mixture onto wax paper, separating nuts slightly so they don’t clump.
- Allow to cool completely before serving.
