Ingredients

  • 1 cup pecan halves
  • 1 cup whole almonds
  • 1/2 cup walnut halves
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 3 tablespoons fat-free half and half

Instructions

  1. Roast the pecans, almonds, and walnuts by placing them in a single layer on a baking sheet and baking at 350°F for 8 to 10 minutes until just beginning to brown.
  2. Mix together the sugar, cinnamon, salt, and half and half in a microwave-safe bowl.
  3. Microwave on High for 2 minutes, then stir.
  4. Microwave again for 1 minute or until the mixture thickens.
  5. Stir in vanilla extract and the roasted nuts, coating them well.
  6. Spoon the nut mixture onto wax paper, separating nuts slightly so they don’t clump.
  7. Allow to cool completely before serving.
