Microwave Split Pea Soup

Ingredients

  • 6 c. water
  • 1 lb. dried green split peas (about 2 1/2 c.)
  • 3 medium carrots, coarsely grated
  • 1 medium onion, thinly sliced
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Combine all ingredients in 3-quart casserole.
  2. Cover and microwave on High for 10 minutes.
  3. Reduce power to Medium. Microwave until vegetables are tender and soup is thickened, 1 hour to 1 hour and 10 minutes, stirring 2 or 3 times during cooking.
