Middle Eastern Salad Rolls

Ingredients

  • 6 iceberg lettuce leaves, cut in half
  • 12 cup hummus
  • 12 cup grated carrot
  • 12 cup coarsely chopped kalamata olive
  • 12 cup diced English cucumber
  • 12 cup coarsely chopped tomatoes
  • 14 cup flat leaf parsley
  • 1 tablespoon hot pepper sauce

Instructions

  1. Place lettuce on work surface.
  2. Spoon 4 teaspoons hummus down center.
  3. Divide carrot, olives, cucumber and tomato on top.
  4. Top with parsley pepper sauce and lemon juice.
  5. Roll up lettuce to enclose and place seam side down.
