Mini Cinnamon Teacakes

- Preheat oven to 350°F. Lightly grease a 12-hole muffin pan.
- Beat the butter and sugar together until pale. Beat in egg and vanilla. Fold in the flour alternately with milk, stirring until combined. Spoon mixture evenly into pan.
- Bake 12-15 minutes, until a skewer inserted in the center of a cake comes out clean. Cool in pan for 5 mins, then transfer to a wire rack.
- For the topping, brush hot cakes with melted butter and sprinkle with combined sugar and cinnamon.
- Serve teacakes warm or cooled.
