Mini Diamond Doughnuts

Ingredients

  • 2 1/3 cups flour
  • 2 None eggs
  • 1/3 cup sour cream
  • 5 tbsp sugar
  • None pinch salt
  • 2 1/2 cups oil, for frying
  • 1 tbsp powdered sugar

Instructions

  1. To make the batter, knead the flour, eggs, sour cream, 2 tbsp sugar and a pinch of salt with the dough hook of a mixer until smooth. On a lightly floured surface, roll out to about 1/3 inch thick. Cut into about 20 (2 x 3) inch diamonds. Prick all over with a fork and cover with a dish towel. Allow to rest for 2 hours.
  2. Heat the oil in a deep fryer or large saucepan to about 325°F. Fry the doughnuts in batches for 4-5 mins, until golden brown. Drain on paper towels. In a small bowl, mix the powdered sugar and remaining granulated sugar and dust on the doughnuts to serve
