Mixed Berry Cake

Ingredients

  • for the Cake
  • 100 grams Frozen Berries
  • 225 grams Self Raising Flour
  • 225 grams Sugar
  • 225 grams Margarine
  • 4 Eggs
  • 1 teaspoon Vanilla Extract
  • for the Coulis
  • 200 grams Frozen Berries
  • 2 tablespoons Sugar
  • 100 milliliters Water

Instructions

  1. To make the Coulis Put the frozen berries into a saucepan, and bring up to a high heat.
  2. Add the sugar and Water, mixing for 10mins, until the sugar is dissolved and the fruit is beginning to break down.
  3. Put the mixture into a liquidizer and blitz down, until smooth.
  4. Pour out in to the pan again, and set aside for later.
  5. For the Cake Pre-heat your oven to 180C/350F.
  6. Cream the butter and margarine together, until light and fluffy.
  7. Add in the eggs, one at a time, beating well before each addition.
  8. Add in the flour, and mix thoroughly.
  9. Add in the frozen berries and vanilla, ensuring they are mixed well with the sponge batter.
  10. Line a tin with grease-proof paper.
  11. Put all of the sponge mixture into the lined tin, and then spread out evenly.
  12. Put into the oven and cook for 50-55mins.
  13. Take the cake out of the oven when cooked. Leave to cool fully before peeling of the grease-proof paper.
  14. When cool, cut out one long slice, as thick as you would like it, then cut that slice in half.
  15. Heat some custard in a pan.
  16. Put a slice of the cake into a shallow bowl, and then fill in the sides of the bowl with the hot custard.
  17. Spoon over the coulis onto one side of the cake, and allow it to cover it.
  18. Add some raspberries to the top.
  19. A beautiful dessert, making the best out of frozen food, whats not to love!
