- Fire a generous amount of charcoal; when they're all red, push them evenly to the sides of your grill, forming a circle.
- Put fresh charcoal cubes on top of the hot coals (be generous).
- Place a medium pot of water in the center of the grill's opening or circle.
- Place a cooking rack over the pot of water and set the turkey on the rack.
- Ensure the turkey is in a large baking pan.
- Soak a handkerchief in butter and place it over the turkey.
- Close the grill lid and go shopping.
- Turkey will be done in about 6 hours.
