Ingredients

  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 pounds boned veal shoulder
  • 4 tablespoons olive oil
  • 1 large yellow onion
  • 2 cloves garlic
  • 1 1/2 cups white wine
  • 1/2 cup water
  • 1/4 cup tomato paste
  • 1/2 teaspoon thyme
  • 1/2 teaspoon tarragon
  • 1 teaspoon orange peel

Instructions

  1. Preheat oven to 325°F.
  2. In a shallow bowl, blend the flour, salt, and pepper. Dredge the veal in the mixture.
  3. Heat 3 tablespoons of olive oil over medium-high heat for 1 minute.
  4. Add the veal and brown on all sides, about 5 to 7 minutes.
  5. Transfer the veal to a casserole dish.
  6. Add the remaining oil, chopped onion, and minced garlic to the skillet.
  7. Saute, stirring over medium heat, until the onion is soft, about 5 minutes.
  8. Add white wine, water, tomato paste, thyme, tarragon, and orange peel. Bring to a boil over medium-high heat.
  9. Pour the mixture over the veal in the casserole.
  10. Cover and bake for 2 hours.
  11. Add the sliced mushrooms.
  12. Re-cover and bake for an additional 30 minutes.
