Molasses Brown Bread

Ingredients

  • 2 c. flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 2 tsp. salt
  • 2 c. whole wheat flour
  • 2 c. yellow corn meal
  • 1 (12 oz.) jar molasses
  • 4 c. buttermilk or 1 qt.
  • 2 c. chopped pecans
  • 2 c. yellow raisins or dark raisins

Instructions

  1. Sift flour with all baking powder, baking soda and salt. Combine with all dry ingredients.
  2. Beat in molasses and milk.
  3. Fold in nuts and raisins; mix.
  4. Spoon batter into 10 or 12 greased soup cans.
  5. Fill to 3/4 and cover cans with small pieces of greased aluminum foil.
  6. Place cans on cookie sheet and bake at 350° for 1 hour.
  7. Cool for 5 minutes.
  8. Unfold.
  9. Freeze if you want to.
  10. Cut in thin slices and put cream cheese on them for snacks.
