Molded Berry Salad

Ingredients

  • 1 (10 oz.) pkg. frozen strawberries or red raspberries
  • 1 (6 oz.) pkg. raspberry or strawberry flavored jello
  • 2 c. boiling water
  • 1 pt. vanilla ice cream
  • 1 (6 oz.) can frozen lemonade concentrate
  • 1/3 c. chopped pecans

Instructions

  1. Place package of fruit in hot water to thaw for 10 minutes. Drain berries, reserving syrup.
  2. In a bowl, dissolve gelatin in the boiling water.
  3. Add ice cream by spoonfuls, stirring until melted. Add lemonade concentrate; stir until melted.
  4. Add the reserved syrup.
  5. Chill until partially set.
  6. Fold in the drained berries and pecans.
  7. Turn into a 6 cup ring mold.
  8. Cover; chill in refrigerator for 6 to 24 hours.
  9. Before serving, unmold onto a serving plate. Makes 8 to 10 servings.
