Morels in Marsala
Ingredients

- 1.
- Melt the butter in a pan.
- 2.
- Sweat the shallots until translucent.
- 3.
- Add the morels and sweat until partly soft.
- Sprinkle with salt and pepper and add more butter if necessary.
- 4.
- Add the Marsala and deglaze.
- Let simmer and reduce on low heat.
- 5.
- Once the mushrooms are cooked through, season to taste and toss in the parsley.
- Serve over fresh pasta or on their own.
- Serves 2-4.
