Ingredients

  • 2 cups sifted flour
  • 2 cups sugar
  • 1 cup Crisco
  • 6 eggs
  • 1 teaspoon lemon extract
  • 1 teaspoon almond extract

Instructions

  1. Use a tube cake pan; line only the bottom of the pan.
  2. Grease thoroughly the sides, bottom, paper, and especially the funnel of the pan.
  3. Preheat the oven to the appropriate temperature (usually 350°F).
  4. In a mixing bowl, sift together 2 cups of flour and 2 cups of sugar.
  5. Add 1 cup of Crisco to the dry ingredients and mix until well combined.
  6. Separate 6 eggs, add the yolks to the mixture, and beat well.
  7. Add 1 teaspoon of lemon extract and 1 teaspoon of almond extract to the mixture.
  8. Beat the egg whites separately until stiff peaks form.
  9. Gently fold the egg whites into the batter to incorporate air.
  10. Pour the batter into the prepared tube cake pan.
  11. Bake in the preheated oven for approximately 60 minutes or until a toothpick inserted into the center comes out clean.
  12. Allow the cake to cool in the pan for a few minutes, then turn out onto a wire rack to cool completely.
