Ingredients

  • 1 medium eggplant
  • 3 Tbsp. melted butter or margarine
  • Mozzarella cheese
  • salt

Instructions

  1. Cut the eggplant into crosswise slices 1/3-inch thick.
  2. Peel the eggplant slices and place them on a foil-lined broiler pan.
  3. Brush the slices with melted butter and sprinkle with salt and pepper.
  4. Broil until golden brown, then turn the slices and brush with butter and season again.
  5. Broil until golden brown.
  6. Top each piece with mozzarella cheese and broil until the cheese bubbles and browns.
