Ingredients

  • 1/4 cup olive oil
  • 2 medium sweet onions, finely chopped
  • 1 cup green lentil
  • 1/2 cup brown basmati rice
  • 2 cups water
  • 1 teaspoon salt

Instructions

  1. Saute onion in oil until caramelized (about 50 minutes).
  2. While onions are cooking place lentils in saucepan and cover with water by an inch. Bring to boil over medium heat. Reduce to a simmer and cook for 20 minutes. Drain lentils and set aside.
  3. When onions are ready stir in rice, lentils, salt and 2 cups water. Bring to a boil, cover and reduce heat to a simmer.
  4. Simmer for 40 minutes or until rice is tender.
