Instructions

  1. A proper pot roast is a square cut of chuck, rump or round.
  2. Use a heavy metal or iron pot with a grill insert and a tight cover for braising the roast.
  3. Brown the meat carefully on all sides; season as you brown.
  4. Slip the grill under the roast and add a small amount of water or tomato juice.
  5. Cover and simmer over low heat, renewing liquid occasionally.
  6. Add vegetables; cover and cook over low heat until meat and vegetables are tender.
