  • 3 qt. water
  • 1/4 c. sugar
  • 3/4 c. canning salt
  • 1/2 tsp. powdered alum
  • 2 onions, sliced
  • 2 cloves garlic
  • 4 large dill heads

Instructions

  1. Bring vinegar, water, sugar, salt, and powdered alum to a boil, then allow the brine to cool.
  2. Place dill heads, sliced onions, and garlic cloves in the bottom of the jar.
  3. Pack large cucumbers, quartered and sliced lengthways, into the jar on top of the aromatics.
  4. Add four more dill heads and onions on top of the cucumbers.
  5. Pour the cooled brine over the cucumbers and aromatics, ensuring they are fully submerged.
  6. Seal the jar and place it in the refrigerator.
  7. Let the pickles sit for 5 days before consuming.
  8. Enjoy the pickles within 4 to 5 months for the best flavor.

Tips & Substitutions

For a more intense flavor, consider adding spices like mustard seeds or red pepper flakes to the brine. If you prefer a sweeter pickle, increase the sugar slightly. Fresh dill is ideal, but dried dill can be used in a pinch—just reduce the amount. Ensure cucumbers are firm and fresh for the best texture. Taste the brine before pouring over the cucumbers to adjust the seasoning as needed.

Serving Suggestions

These dill pickles are perfect as a crunchy snack on their own or as a tangy addition to sandwiches and burgers. They pair beautifully with Horseradish Pot Roast or can be served alongside a cheese platter. For a refreshing side, consider serving them with Marinated Bean Salad to complement the flavors.

Storage & Reheating

Store the pickles in the refrigerator once sealed. They can last up to 4 to 5 months, but for the best flavor, consume them within the first few months. Avoid freezing, as it will alter the texture. Keep the jar tightly sealed to maintain freshness and prevent spoilage.

Frequently Asked Questions

Can I use other types of vinegar for this recipe?

Yes, while white vinegar is traditional, you can experiment with apple cider vinegar for a slightly different flavor. Keep in mind that the acidity level should remain similar to ensure proper pickling.

How can I make these pickles spicier?

To add some heat, incorporate crushed red pepper flakes or sliced jalapeños into the jar before adding the cucumbers. Adjust the amount based on your spice preference.

What if my pickles are too soft after pickling?

Soft pickles can result from over-processing or using older cucumbers. To prevent this, use fresh, firm cucumbers and ensure the brine is at the correct temperature before pouring. For future batches, consider adding a few grape leaves to maintain crispness.
