Ingredients

  • 1 large honeydew melon (green flesh)
  • 1 watermelon (15 to 20 lb.)
  • 1 large Persian melon or 2 to 3 cantaloupe (ripe)

Instructions

  1. The day before the picnic, select ripe watermelons, honeydews, or Persian melons that fit your ice chest or fridge, and prepare them for serving.
  2. Place washed, dried, unchilled melons on a drain-board; gather utensils and clear a shelf in the fridge.
  3. Arrange an oblong platter or French bread basket on top of the whole watermelon; draw a shallow cap around the top of the watermelon with a felt tip marker.
  4. Using a paring knife, cut along the cap line with the knife parallel to the board.
  5. Gently remove the cap with an 8-inch knife using a lever action.
  6. Cut the red melon into bite-sized pieces and place in a bowl; scoop out large melon balls and put them in a large bowl.
  7. Smooth out the inside of the watermelon shell; cut odd-sized pieces and juice into a separate bowl.
  8. Peel honeydews, Persian melons, and tops to create bowls; repeat the process for melon balls and discard seeds.
  9. Rinse and wipe the outside of the shells; create a saw-toothed edge on the watermelon shell for decoration.
  10. Fill the watermelon shell with a mix of all melon balls until full.
  11. Pour juice from the pieces bowl and the emptied shells into the watermelon shell.
  12. Fill the red shell until it is half full; wipe, cover, and chill.
  13. Fill the other shell with leftover melon balls and juice; cover and chill.
  14. Repeat the same for the pieces bowl.
  15. Transport the prepared watermelon shells and bowls in an ice chest, covered with crushed ice.
  16. Save the Persian melon shell for breakfast.

Tips & Substitutions

For best results, choose ripe melons that yield slightly when pressed. If honeydew or Persian melons are unavailable, ripe cantaloupe can be substituted. Ensure all melons are washed thoroughly to remove any pesticides. To add a hint of flavor, consider drizzling a light honey mustard marinade over the melon balls before serving.

Serving Suggestions

Serve the watermelon salad chilled as a refreshing side at picnics or barbecues. It pairs beautifully with grilled meats or sandwiches, making it a perfect complement to dishes like honey mustard marinade for grilling. For an added twist, sprinkle fresh mint leaves on top before serving.

Storage & Reheating

Store any leftover melon balls and juice in airtight containers in the refrigerator for up to two days. To keep the melons fresh, avoid stacking them too tightly to prevent bruising. Reheat melon pieces gently in the microwave for a minute if desired, but they are best enjoyed cold.
