My Pop'S Batter Bread

Ingredients

  • 2 c. corn meal
  • 2 c. boiling water
  • 1 tsp. salt
  • 4 Tbsp. butter or margarine
  • 2 c. milk
  • 3 eggs
  • 1 Tbsp. sugar

Instructions

  1. Put corn meal in a mixing bowl.
  2. Scald half of it with the boiling water.
  3. Add salt and milk.
  4. If more milk is needed to make a smooth running batter, add a little at a time.
  5. Add eggs and sugar; beat well.
  6. Melt the butter in an 8 x 8-inch baking dish (may be heated in the oven); circulate the butter over the dish well.
  7. Pour melted butter into the batter and mix well.
  8. Pour batter into baking dish.
  9. Bake at 450° for about 35 minutes or until golden brown.
  10. Serve with more butter!
