Ingredients

  • 1 Duncan Hines yellow cake mix
  • 2 lb. whole milk ricotta
  • 3/4 cup sugar
  • 4 eggs
  • 1/2 teaspoon vanilla extract

Instructions

  1. Pour the prepared yellow cake mix into a greased 9 x 12 x 2 inch pan.
  2. In the same bowl, mix by hand the ricotta, sugar, eggs, and vanilla or other extract until well combined.
  3. Spread the ricotta mixture evenly on top of the cake mix in the pan.
  4. Bake for 1 hour at 350°F (175°C).
  5. Allow to cool and sprinkle with confectioners' sugar when serving.
  6. Better enjoyed the second day than the first.
  7. Freezes well for later enjoyment.
