- Beat the eggs until well combined.
- Mix sugar, salt, and flour well in a bowl.
- Stir the dry mixture quickly into the beaten eggs.
- Add milk and beat vigorously until the batter is smooth and free of lumps.
- Have 1 or 2 lightly buttered and well-heated frying pans ready.
- Pour just enough batter into each pan to cover the bottom when tilted and swirled.
- Shake the pan over the burner until the bottom is browned and the top is firm to touch.
- Do not turn the crepes over.
- Set each crepe aside to cool.
- These crepes can be prepared several hours before serving.
