Ingredients

  • 3 eggs
  • 3/4 cup milk
  • 2 tablespoons sugar
  • 1/2 teaspoon salt
  • 6 tablespoons flour

Instructions

  1. Beat the eggs until well combined.
  2. Mix sugar, salt, and flour well in a bowl.
  3. Stir the dry mixture quickly into the beaten eggs.
  4. Add milk and beat vigorously until the batter is smooth and free of lumps.
  5. Have 1 or 2 lightly buttered and well-heated frying pans ready.
  6. Pour just enough batter into each pan to cover the bottom when tilted and swirled.
  7. Shake the pan over the burner until the bottom is browned and the top is firm to touch.
  8. Do not turn the crepes over.
  9. Set each crepe aside to cool.
  10. These crepes can be prepared several hours before serving.
