Ingredients

  • 1 c. butter
  • 1 c. sugar
  • 1 egg, separated
  • 2 c. all-purpose flour
  • grated rind of 1/2 lemon
  • juice of 1/2 lemon

Instructions

  1. Cream butter in a large mixing bowl.
  2. Add sugar, beating until light and fluffy.
  3. Add egg yolk, flour, lemon rind and juice; mix well.
