Native Cheese Ball

Ingredients

  • Round as a snowball, this savory kitchen cheeseball is too delicious to throw at just anyone. This recipe and tons more can be found in our Celebrations Cookbook!
  • 1 cup almonds, slivered and blanched
  • 1/4 cup pine nuts, unsalted and toasted
  • 1/4 tsp. sea salt
  • 1/2 tsp. organic sugar
  • 5 ounces silken tofu, firm and drained
  • 1 tbsp. white miso paste
  • 1 tsp. horseradish
  • 1 tsp. red wine vinegar
  • 1 tsp. lemon juice
  • 1 tsp. safflower oil
  • 1/2 tsp. onion powder
  • 1 tsp. fresh chives, chopped

Instructions

  1. Place almonds and pine nuts in a food processor with the salt and sugar and blend until ground for about 2 minutes or until clumps start to form.
  2. Now add the tofu, miso paste and horseradish to the nut mixture that's already in the food processor, along with the red wine vinegar, lemon juice, safflower oil and onion powder. Blend about 2 minutes
  3. Gently fold the chives in with a fork or spoon
  4. Spray a bowl and a square of plastic wrap with no-stick spray, Pile mixture into the bowl and cover with plastic wrap. Place in fridge to chill for a couple of hours or overnight. It will get very firm and can now be shaped into a ball and rolled in chopped walnuts to coat. Lightly oil your hands so it will not stick when rollingThen serve with crackers and wine.
