Ingredients

  • 1 c. navy beans, soaked overnight
  • 1/4 of small head cabbage (2 oz.)
  • 2 oz. pumpkin
  • 3 Tbsp. olive oil
  • 1 bay leaf
  • 1 batch sofrito (see Sauces)
  • 3 c. water
  • 2 to 3 tsp. salt
  • 1/2 lb. potatoes

Instructions

  1. Make sofrito and cook for about 3 minutes.
  2. Add bay leaf, softened beans (either soaked overnight or cooked 30 minutes in a pressure cooker) and water.
  3. Cook on medium heat.
